If you’re concerned that it will become hard, you might try cooking it with less salt and oyster sauce. They are hard in the fresh form, but after being cooked for a few hours, they become softer. As the abalones simmer, make sure there is enough liquid to cover them; otherwise, they may become rough and dry.
