Vacuum sealing your smoked oysters when they’re cold is the best way to keep them fresh. They will stay fresh for a year if you do this. If not, you may store them in an olive oil container and preserve them in the fridge for roughly two weeks.
Oh, and can you use already-shucked oysters for this? Though it wouldn’t be my preference, I suppose.
