Most regions of the country have specialty meat shops, natural and organic markets, grocery stores, and membership warehouse outlets where you can buy bison. The meat of bison is frequently bought from a nearby rancher or at a farmers’ market. The ability to purchase in quantity when purchasing bison directly from a rancher is one advantage.

How much does bison meat cost to purchase?
Although we might not be able to explain market forces that would account for basic costs, we can provide some insight into the costs of the finished product.
Let’s begin with Grain-Fed Wholesale Prices for both American and Canadian animals. A 24 to 30 month old bison bull’s average hanging hot weight (HHW) was 651 pounds, according to the USDA Market News’ Monthly Bison Report for July 2018, and was sold for an average price of $489.69 per 100 pounds of weight (CWT). This equals a wholesale price per animal of $3,208.52.
The typical wholesale price for bison meat, excluding the costs of processing, labelling, and other packaging and marketing charges, would be $10.02 per pound, given that the amount of real packaged saleable meat would be around 300-320 pounds. If processing expenses alone range from $0.55 to well over $1.00 per HHW, the wholesale price would increase by an extra $358.00, or $11.14, to reflect this.
If you are purchasing bison meat for less than $10.00 or $11.00 a pound, you need to consider what you are truly purchasing. A product cannot be sold at a lower price than wholesale unless it is out-of-date or in some other way inferior.
Every day, a 1,000 pound, 20 to 30 month old bull will sell for $3,000.00. If this animal produced 300 pounds of processed meat, the meat would be worth $10.00 per pound even without any additional costs or marketing initiatives. As a result, we are starting at a cost (investment) of $10.00 per pound, just like wholesale.
There is a $45.00 kill fee, a $150.00 USDA inspection fee, a $0.65 per pound HHW for processing (assuming a 560 pound HHW), and a $0.15 labeling fee for each pound of packaged meat. Transportation costs (200 miles round trip) to the processing plant are not included (estimated at 300 pounds). This translates to an estimated $604.00 in expenses for processing and slaughter. With 300 pounds of processed beef assumed, this increases our total investment to $3,604.00, or a cost of $12.01 per pound.
Our infrastructure investments, feed expenses, and overall farm operating costs are not included in these charges. When all of these expenses are included, the price to produce one pound of bison meat is considerably over $12.00.
The fact that animals on a diet of only grass have substantially lower weight gains than those fed grains and grain byproducts further drives up prices. As a result, our certified grass-fed and -finished animals will weigh less at slaughter and produce less meat that can be sold, raising the overall cost of production.
A product cannot be sold for less than it cost to make, therefore even though you might see bison meat for sale for less, you should think twice before buying.
Is the bison at Costco good?
Although I anticipated a slightly gamey flavor, the Costco ground bison is excellent! Absolutely no taste of game.
Because it’s leaner and fattier than ground beef, the flavor isn’t as intense. The flavor of the ground bison has a hint of sweetness, but not a cloying sweetness. Additionally, it was much leaner in texture than ground beef and extremely lean.
When I used the ground bison to create chili, you couldn’t tell if it was made from bison or ground beef!
Does Aldi offer bison ground meat?
For a number of years, my family and I have enjoyed going to a regional prairie day celebration, which usually takes place every two years, barring rain or global pandemics. On the grounds of a natural reserve area featuring a replica of a tall grass prairie environment, a sizable event was taking place. On prairie day, there was a sod house to explore in addition to pioneer activities, craft displays, and blacksmiths. Hot dogs, chips, ice cream, and soda were among the festival staples available at the concession stand. In addition, they offered bison burgers, which attracted enough interest from festival visitors to frequently sell out rapidly.
Some eateries provide bison burgers if you can’t make it to a prairie festival. In order to cook your own grilled bison burgers at home, you can also occasionally purchase ground bison from Aldi. We previously discussed some ground bison that Aldi used to offer under the Great Range label. Later, under its Never Any! private label, Aldi began offering ground bison. Lunchmeat, uncured spiral ham, butterflied lamb leg, entire turkeys, Lunchable-style lunch kits, chicken sausage, and other goods without specific preservatives, antibiotics, or other undesired ingredients are all included under the Never Any! label at Aldi.
I frequently keep a box of Aldi Never Any! ground bison in my freezer, ready to make burgers whenever my family feels like them. I’ve been purchasing it whenever I see it in supermarkets for a long now.

If you are unable to get ground bison at this time, keep a look out in the refrigerated fresh meat section of Aldi since it frequently appears throughout the year.
Ground bison is the only ingredient. It has 10% fat and 90% lean meat. The bison was grown on a vegetarian diet and was not given any antibiotics. It needs to be kept chilled and has undergone very little processing. If you want to stock up when Aldi sells this, it also freezes well.
Per packet, there are roughly four 4-ounce (112-gram) servings. 190 calories, 11 grams of total fat (14% DV), 4 grams of saturated fat (20% DV), 50 mg of cholesterol (17% DV), 60 mg of sodium (3% DV), 23 grams of protein, no carbs or sweets, and 60 mg of salt are all included in one serving.
I used garlic powder, salt, and pepper to season the ground bison. I then divided it into four patties, which my husband cooked for about 10 minutes at 350 degrees on our charcoal barbecue. Since bison is typically a thinner meat than beef, you want to watch it carefully when cooking to avoid overcooking. These bison burgers turned out to be tasty and tender. For a delicious summer dinner, I served them on Aldi kaiser buns with some Aldi potato circles (tator tots) and an Aldi salad kit.
For quick burger nights, it’s certainly worth having a package or two of this ground bison in the freezer.
Why does bison cost more than beef?
There are a number of significant factors why bison is more expensive than beef. Bison is one of the most difficult to find of all the meats that Americans are accustomed to. The cost of a delicious and tender bison cut will be higher than that of a comparable cut of beef.
The circumstances the animals are raised in are the main cause of the higher price of bison. The majority of the US’s buffalo herds are kept in North and South Dakota, where the wild animals are free to wander. They normally finish on grain for the final 90 to 120 days before slaughter after spending the majority of the year grazing wild grasses. In the US, about 20,000 bison are processed annually. In contrast, the US processes 125,000 beef cattle daily.
Due to the scarcity of bison and the need for more space to support the herds, the animal is more expensive. Bison are reared under circumstances that are either impractical or impossible for livestock.
How much bison weighs in a pound?
The going rate set by the USDA is $4.80 per pound for bison meat that has been removed from an animal carcass. Due to the insufficient number of grass-finished animals, this price is based on grain-finished animals.
Does bison have a beef flavor?
Consider your favorite steak or burger to date: Bison meat has a flavor that is easily comparable. It has a flavor that is comparable to beef but is distinguished by a faintly sweet undertone. No matter how you prepare it, bison is exceptionally soft and does not taste gamey like certain specialty meats.
