My sausage balls go flat; why?

In this recipe, any type of uncooked, ground sausage will work. Try different flavors to see which you like most. Depending on how I’m feeling, I frequently use a mild Italian sausage, a spicy sausage, or a maple sausage.

The powdered coating used to keep the pre-shredded cheese from clumping can occasionally cause the balls to bake flat. For optimal results, use recently shredded cheese.

Make these as close to the day you will be serving as you can. They are at their best when they are still warm from the oven. If you prepare them ahead of time, you may serve them warm from the microwave or at room temperature. The sausage balls can also be prepared the day before and kept raw in the refrigerator until you’re ready to bake them; this produces better results than reheating them.

If you have any leftover sausage balls (I never have any!) Keep in the refrigerator for up to three days in an airtight container.

These are really convenient to prepare using a pre-made mix, but if you don’t have any on hand, you can make them with 3 cups of flour, 3 teaspoons of baking powder, and 1/2 teaspoon of salt instead.

I advise storing these uncooked, not cooked, if you want to freeze them. Place them on a baking sheet after combining the ingredients. For up to three months, keep frozen after a brief period of freezing and transfer to a freezer bag. Bake from frozen by adding an extra 5 minutes to the baking time.
