This table just serves as a rough estimate of how much sausage you would need per person. Due to the various varying elements described above, it isn’t entirely true.

A good rule of thumb with sausages, in my opinion, is a half-pound per person. You won’t find that advise in other online pieces, so expect it to be unique. I’ll tell you why shortly.

Here in Texas, eating barbecue is more than simply a tradition—a it’s way of life. BBQ is the major attraction at all events, including family get-togethers, parties, weddings, and basic weeknight suppers. It would have no trouble becoming a separate food category in Texas. (And it would be at the top based alone on principle!) Knowing how much BBQ to buy or order can be difficult, whether you are feeding your family of four or hosting a party for 40 people.
If you’re cooking for a big group or using our BBQ catering service, determining portions per person might be particularly challenging. Because it would be a Texas barbecue scandal to run out of food, you also don’t want to buy too much and end up with leftovers that might not be consumed (although we doubt that would ever happen).
For example, when we cater with our classic brisket and sausage plate, we figure 1/4 pound brisket and 1/4 pound sausage per person. To put servings in perspective, we recommend 1/2 pound to 1/3 of a pound of barbecue meat per person. When serving a large gathering, you never know if there will be champion eaters, whose very presence has been known to frighten animals, or petite eaters who prefer to graze occasionally (we call these children). One adult dish of beef will be sufficient for two smaller children if there are kids present, whether at home or at the event. We advise ordering at least two “bones” per adult because the ribs are served bone-in. You might want to double that serving suggestion if you are only serving ribs. We would have to think you are not from around here if we sat down to eat some ribs and were only offered two.
When arranging to serve BBQ, side dishes should also be taken into account. Each visitor should be prepared to consume one cup of each side dish at large gatherings. When preparing a family meal, you will normally anticipate that you and your children will consume half a cup of each side dish. We provide individual 4- and 8-ounce servings of our side orders. Sabine Rohrmann from the Institute of Social and Preventive Medicine at the University of Zurich states, “We estimate that three percent of all premature deaths can be ascribed to the high intake of processed beef.” She has been examining the connection between the use of processed meat and the risk of mortality as part of a Europe-wide study involving over 450,000 participants, working with research partners from 10 different countries.
People who consume a lot of processed meat, such as sausage, salami, or ham, are at an increased risk of developing cancer or cardiovascular disease.
